What are the types of Baking Powder?
There are three types of Baking Powder, one is the front type, commonly known as fast reacting Baking Powder.One is the rear type, commonly known as slow reacting Baking Powder. And the third type is the double acting Baking Powder.
When mix Baking Powder and flour then add in water, rapid reacting Baking Powder releases gas after reacting with water,which plays a role in leavening dough.
Slow reacting Baking Powder plays a role in leavening dough by releasing gas after heating, while baking or steaming process.
Double acting Baking Powder plays a role in leavening dough by releasing gas both in kneading dough and heating process.
