Buttercream
1.2 egg yolks
2. 1/4 cup (60 ml) water
3.1/2 cup (125 ml) sugar
4.1 tablespoon (15 ml) corn syrup
5.1 cup (250 ml) unsalted butter, tempered for 20 minutes
6.1/2 teaspoon (2.5 ml) instant coffee
7.1 teaspoon (5 ml) hot water
8.1/2 oz (15 g) melted and tempered chocolate
9.1/2 teaspoon (2.5 ml) vanilla extract
Soaking Syrup
1.1/2 cup (125 ml) espresso or strong coffee, hot
2.2 tablespoons (30 ml) sugar
Ganache
1.2 oz (55 g) semisweet chocolate, chopped
2.2 tablespoons (30 ml) 35% cream, boiling
