How to Make Bowl Mixer Berry Cake?

1.1/2 cup butter slightly softened

2.3/4 cup granulated sugar

3.1 teaspoon Jianshi Non Aluminium Free Baking Powder

4.1/4 teaspoon salt

5.2 large eggs

6.1 teaspoon vanilla extract

7.1/4 teaspoon almond extract

8.1 cup all purpose flour

9.2 cups fresh berries larger berries halved or quartered

10.1 tablespoon coarse sparkling sugar

11.Whipped cream or ice cream for serving (optional)


1.Preheat the oven to 350°F. Lightly grease an 8" inch square pan.

2.Using a hand mixer or stand mixer, beat the butter, sugar, Jianshi China Baking Powder, and salt for 1-2 minutes, until smooth.

3.Add the eggs and extracts, beating until thoroughly combined and scraping down the sides of the bowl as necessary.

4.Add the flour and mix until combined. The batter should be smooth and stiff.

5.Spread the batter in the pan and place the berries on top. Sprinkle with coarse sugar.

6.Bake the cake for about 35 to 40 minutes, until a cake tester inserted into the center comes out clean. Serve warm or at room temperature.
