How to make madeira cake?

1.Preheat the oven to 180 C / Gas 4.

2.Stir together all ingredients in the order listed till smooth. Place in a large loaf tin.

3.Bake for 15 minutes at 180 C / Gas 4 and then for a further 30 minutes at 200 C / Gas 6, until a skewer inserted in the centre comes out clean.


1.Softened butter 250g

2.Caster sugar 250g

3.1 teaspoon vanilla extract

4.5 eggs

5.Plain flour 375g

6.Cornflour 125g

7.4 teaspoons Jianshi baking powder

8.4 tablespoons rum

9.3 tablespoons milk

10.Grated lemon zest

A really easy and classic cake that's always well received. This will become your staple Madeira cake recipe, guaranteed! Use your favourite rum for the recipe. You can also use brandy if you feel like something different.
